Yellow Curry with Ground Chicken
Ingredients:
1 pound ground chicken
3 TB coconut oil
1 yellow onion, minced
3 scallions
5 garlic cloves, minced
3/4 cup carrots, cut into matchsticks or slices
1/4 tsp turmeric
juice of half a lime
1 tsp low-sodium soy sauce
1/4 cup cilantro, minced
sriracha, to taste
salt, dash
1/2 can coconut milk
1/2 cup pineapple, chopped
Directions:
1 pound ground chicken

1/2 can coconut milk
1/2 cup pineapple, chopped
Directions:
- Cook the onion and carrot in coconut oil until onions are translucent.
- Add ground chicken to the pan and cook through.
- Add garlic, scallions, and cilantro and cook 1 minute more over low heat.
- Add turmeric, salt, soy sauce, lime juice, sriracha, and coconut milk. Simmer for 1 minute.
- Add pineapple and simmer one minute.
- Serve with zucchini noodles, brown rice, or kasha.
